Hello again!
Just thought I'd ask if any of you out there also have to cook for a child with food allergies? I have a 14 year-old son who is allergic to milk and eggs and mold (which amazingly takes all sorts of things out of our regular grocery shopping!!!) Anyway, we only found out about these allergies a year ago and I'm still struggling learning how to cook for him. The poor kid had to give up all his favorite foods!
I want to make him some cookies for the holidays.....so here's my question - do you have any good cookie recipes using no eggs (or egg replacer) and no milk (or subbing soy or almond or rice milk)? He can have soy milk and he likes almond milk. It just doesn't seem like all recipes work when you use these substitutes.
If you have a good recipe, would you be willing to share it with me?
Thanks so much!!

good luck, can he have "cake mix"... if there is one that the egg enzymes are broken down? no egg?
I dunno.
My daughter (and i) have a low tolerance for egg - they have to be really well cooked, far and few between.
also, i know what your going through, My daughter is now 17 and just last year we discovered she is allergic to wheat, soy, nuts, corn, ... we knew about banana, and suspect avocado, tropical fruits, shell fish... boy that's made shopping and cooking FUN.
-not-
SO, i know what your going through.
thank GOD she is not a vegetarian on top of it all -
so, when we knew FIRST she was lactose intollerant (NOT allergic to Dairy- it wont kill her, just tears her stomach up... )so, i'd been giving her SOY milk. BAD. almond milk, bad.
... her favorite lunch was pb/j on whole wheat bread, and corn chips... nearly killed her, she had hives on top of hives... etc.
Now she lives on raw veggies,fruit and chicken. (sigh)
oh, i have some cake mix cookie recipes that either take, cream chez, pumkin, apple sauce...
let me know. GOOD LUCK!
Hi Kelly, I know this is really late (but I assume your son is still allergic to milk and eggs). I strongly recommend checking out Vegan cookbooks for dairy and egg free recipes (the definition of being Vegan). I've had baked goods turn out well from Isa Chandra Moskowitz's Vegan with a Vengeance and also her Vegan Cupcakes Take Over the World.
Both of these books are available in the Mid-Columbia library system, and I also own copies you could borrow. Just ask my mom the next time you see her.
